Telnet IMAP (143 port)
means that you have a program (presumably your imap server) listening on port 143 via tcp (on both IPv4 and IPv6). And the "0.0.0.0" part means it should accept connections from any source. (If it said "127.0.0.1:143" for the local address, it would mean that only local connections would be accepted.)
After DOVECOT configuration I can connect(thru telnet, from my iPhone using gmail client) to port 143 and get IMAP handshake message, login etc.BUT I get authentication failed error when connecting to port 993 (from iPhone)
Now we have a different piece of software here the connects via port 25, so I tried the telnet from our webMethods server and I was able to establish a connection. I then tried to set up the Email Listener on port 25 but I still get the original message (unable to logon).

I am having some issues, with setting up dovecot. I have been following this guide: -mail-server-ubuntu-14-04/ to setup a mail server, and it was all working. Postfix is installed and configured correctly. As I was doing the Dovecot installation, it asked me about using telnet to connect and verify the connections were working (in the guide) and whether ports: 110,995,993,143 work. But only ports 995 and 993 allow me to connect, but they do not show any kind of: '+OK Dovecot (Ubuntu) ready.' on them.
That being said, I know that i have opened ports 143 and 993. However, I cannot telnet or connect to port 143 remotely (or 993 for that matter). When I try to use Opens a new window and ping either of those, I get connection refused.
If the telnet connection fails, but the IMAP server seems to be running, this is usually because of a firewall getting in the way. Investigate any firewall settings on the IMAP server's host, and any intervening network devices, and make any necessary adjustments to open up port 143.
I've got SASLAuthd working (via LDAP), and am also successfully able to telnet via port 25 with my LDAP credentials. Postfix is configured with Dovecot. All 3 services are running fine (Postfix, Dovecot, SASLAuthd)
I found a domain with open POP3 (110) and IMAP (143) ports. I was able to use TELNET to connect to them successfully, but beyond this is there any common vulnerability/exploit I should test on them, or is this even a security problem to have them open like this?
I'm not sure what exactly you are referring to but my guess is that you've seen this string in the first line you've got when connecting to these ports. Both IMAP and POP3 (and SMTP and FTP...) send after the connection a greeting from the server to the client and this greeting often contains a hostname or server type or whatever the admins liked to have there. Looking for fenix imap at shodan returns something like this:
